摘要

近年来食品安全问题受到了人们的广泛关注,对食品分析及安全检测关键技术的研究成为必要。本文介绍了食品安全的概念、特点、来源以及分析的预处理方法,简单介绍了食品分析及安全检测关键技术的原理和特点。重点综述了气相色谱、高效液相色谱、薄层色谱、免疫亲和色谱、色谱-质谱法、光谱分析法、酶联免疫分析法、生物传感器法和生物芯片等在食品分析及安全检测中的应用,分析了国外相关领域的研究热点,并给出未来的发展方向和解决方法,强调了食品安全分析及检测在食品安全问题中的重要性。

ABSTRACT

In recent years, it's more and more concerned about the food security problem. Research on key technology on food analysis and security detection is become necessary. This paper introduces the concept, characteristics and resources of food security, and pre-teatment method for analysis is also demonstrated. The technology principles and characteristics of key technology on food analysis and security detection were introduced. Detection methods, such as of gas chromatography ,High Performance Liquid Chromatography ,thin layer chromatography,immunoaffinity chromatography , chromatography-mass spectrometry , spectroscopy analysis, ELISA,
